  • 2 cups pasta Any type of pasta can be used.
  • 1 cup cheese (cheddar or your favorite) Feel free to experiment with different types of cheese.
  • 1 cup milk Can substitute with non-dairy milk.
  • 2 tablespoons butter
  • 2 tablespoons flour For making the roux.
  • to taste Salt and pepper
  • optional breadcrumbs for topping Sprinkle on top for a crunchy texture.

Preparation
  1. Boil the pasta according to the package instructions. Drain and set aside.
  2. In a saucepan, melt the butter over medium heat.
  3. Stir in the flour and cook for about 1 minute to make a roux.
  4. Slowly add the milk to the roux, whisking continuously until it thickens.
Cooking
  1. Add the cheese to the sauce and stir until melted.
  2. Combine the pasta with the cheese sauce and mix well.
  3. If you like a crunchy topping, sprinkle breadcrumbs on top.
  4. Bake in a preheated oven at 350°F (175°C) for about 20 minutes or until golden brown.

Notes

Serve hot in bowls with optional extra cheese on top or sprinkled with herbs. Pairs well with a salad or garlic bread. Store cooled leftovers in the refrigerator for 3-4 days or freeze for up to 2 months.
