  • 3/4 cup shredded coconut
  • 3/4 cup diced strawberries Use fresh strawberries for best flavor; frozen can be used if thawed.

Preparation
  1. Preheat your oven to 350°F (175°C) and prepare a loaf pan by lining it with parchment paper or greasing it well.
  2. In a blender, combine the cottage cheese, eggs, sugar, melted butter, and vanilla extract, and blend until smooth.
  3. In a separate bowl, mix together the all-purpose flour, baking powder, and salt.
  4. Pour the wet mixture into the dry ingredients and stir gently until just combined; be careful not to overmix.
  5. Fold in the shredded coconut and diced strawberries until evenly distributed.
  6. Pour the batter into the prepared loaf pan and smooth the top into an even layer.
Baking
  1. Bake in the preheated oven for 36 to 42 minutes, or until the loaf is golden and a toothpick inserted into the center comes out with a few moist crumbs.
  2. Allow the loaf to cool completely before slicing.
