  • 1 cup sugar You can reduce the sugar if using sweetened coconut.
  • 4 large eggs
  • 1/2 cup butter, melted Ensure it's melted but not too hot.
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour Substitute with gluten-free flour for a gluten-free option.
  • 1/2 teaspoon baking powder
  • 1 pinch salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a baking dish.
  2. In a mixing bowl, combine the shredded coconut, sugar, eggs, melted butter, and vanilla extract. Mix well.
  3. In another bowl, whisk together the flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the coconut mixture and stir until combined.
  5. Pour the batter into the prepared baking dish and smooth the top.
Baking
  1. Bake for 25-30 minutes or until the top is golden brown and a toothpick inserted in the center comes out clean.
  2. Let it cool, then cut and serve.

Notes

Coconut Dessert can be served warm or at room temperature. Serve with vanilla ice cream or whipped cream. Store in the refrigerator for up to a week or freeze for three months.
