Ingredients
  

Biscuit Base
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup shredded coconut Toasted for added flavor if desired.
  • 1/2 cup sugar Can substitute with brown sugar or coconut sugar.
  • 1/4 cup butter, softened Make sure butter is softened for easier mixing.
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 unit egg Can be substituted with flaxseed meal mixed with water for vegan option.
  • 1 teaspoon vanilla extract
  • 1/4 cup chocolate chips (optional) Add for extra chocolatey flavor.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, cream together the butter and sugar until light and fluffy.
  3. Beat in the egg and vanilla extract.
  4. In another bowl, mix the flour, cocoa powder, baking powder, salt, and shredded coconut.
  5. Gradually add the dry ingredients to the wet mixture, mixing until combined.
  6. Fold in chocolate chips if using.
  7. Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
Baking
  1. Bake for 10-12 minutes or until firm.
  2. Let cool on a wire rack before serving.

Notes

Best enjoyed slightly warm or at room temperature. For a special treat, try adding a scoop of ice cream or serving with a dollop of whipped cream and fresh fruit.
