Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease and flour a cake pan.
  2. In a large bowl, cream the butter and sugar together until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition. Mix in the vanilla.
  4. In another bowl, combine the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, alternating with the milk, starting and ending with the flour.
  5. Fold in the shredded coconut.
Baking
  1. Pour the batter into the prepared cake pan and smooth the top.
  2. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  3. Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
