  • 2 tablespoons oil For cooking.
  • 2 large eggs, beaten
  • 1 cup mixed vegetables (carrots, peas, corn) Feel free to add any other vegetables you like.
  • 3 stalks green onions, chopped For garnish.
  • 3 tablespoons soy sauce Adjust to taste for saltiness.
  • Salt and pepper To taste.

Method
 

Cooking
  1. Heat oil in a large pan over medium heat.
  2. Add the beaten eggs and scramble until cooked.
  3. Add mixed vegetables and cook for 2-3 minutes until heated through.
  4. Stir in the cooked rice, soy sauce, and green onions.
  5. Mix well and cook for another 3-5 minutes.
  6. Season with salt and pepper, and serve hot.
