Ingredients
  

For the batter
  • 2 pcs eggs Ensure they are at room temperature for best results.
  • 1/2 cup sugar
  • 1/3 cup oil
  • 1/2 cup milk Almond milk or any non-dairy milk can be used.
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon More can be added for additional flavor.
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a square baking pan.
  2. In a bowl, whisk together the eggs, sugar, oil, milk, and vanilla until the mixture is smooth.
  3. Stir in the flour and baking powder just until combined. Be careful not to overmix.
  4. Pour the batter into the prepared baking pan.
  5. Sprinkle cinnamon evenly over the top of the batter and use a knife to swirl it gently.
  6. Bake for 35 to 40 minutes or until the cake is set; a toothpick inserted in the center should come out clean.
  7. Allow the cake to cool slightly before slicing into squares.

Notes

Serve warm or at room temperature, with fresh fruits, yogurt, or a cup of tea or coffee. This cake can be made a day ahead and stored. For a chocolate twist, add cocoa powder or chocolate chips. Adding chopped apples or blueberries can give a fruity touch.
