Preparation
- Preheat your oven to 350°F (175°C) and grease a square baking pan.
- In a bowl, whisk together the eggs, sugar, oil, milk, and vanilla until the mixture is smooth.
- Stir in the flour and baking powder just until combined. Be careful not to overmix.
- Pour the batter into the prepared baking pan.
- Sprinkle cinnamon evenly over the top of the batter and use a knife to swirl it gently.
- Bake for 35 to 40 minutes or until the cake is set; a toothpick inserted in the center should come out clean.
- Allow the cake to cool slightly before slicing into squares.
Notes
Serve warm or at room temperature, with fresh fruits, yogurt, or a cup of tea or coffee. This cake can be made a day ahead and stored. For a chocolate twist, add cocoa powder or chocolate chips. Adding chopped apples or blueberries can give a fruity touch.
