Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
Wet Ingredients
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs
  • 2 tsp vanilla extract
Cinnamon Mixture
  • 1 tbsp ground cinnamon
  • 1/4 cup brown sugar

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In another bowl, combine the melted butter, milk, eggs, and vanilla.
Mixing
  1. Add the wet ingredients to the dry ingredients and mix until just combined.
  2. In a small bowl, mix together the ground cinnamon and brown sugar.
Filling Muffin Cups
  1. Fill each muffin cup halfway with batter, sprinkle with the cinnamon mixture, and then top with more batter until full.
  2. Swirl the batter with a toothpick to create a marbled effect.
Baking
  1. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  2. Let them cool for a few minutes, then enjoy!

Notes

Serve warm or at room temperature. These muffins are great on their own but pair well with coffee or tea. Store leftover muffins in an airtight container at room temperature for up to 3 days, or freeze them in plastic wrap for up to 2 months. Don't overmix the batter for fluffy muffins, and feel free to add nuts for extra texture.
