Preparation
- Preheat your oven to 350°F (175°C) and grease a muffin tin.
- In a large bowl, mix the flour, granulated sugar, baking powder, salt, and ground cinnamon.
- In another bowl, whisk together the milk, vegetable oil, egg, and vanilla extract until smooth.
- Combine the wet and dry ingredients until just mixed. Do not overmix.
- Spoon the batter into the muffin tin, filling each cup about 2/3 full.
Baking
- Bake for 15 to 18 minutes, or until the muffins turn golden brown and a toothpick inserted into the center comes out clean.
Coating
- While the muffins are baking, mix together 1/4 cup of granulated sugar and 1 teaspoon of cinnamon in a separate bowl.
- Once the muffins are cool, brush them with melted butter and roll them in the cinnamon sugar mixture before serving.
Notes
These muffins are best enjoyed warm with a hot beverage. They can also be served with icing or whipped cream for a sweeter treat. To store, keep them in an airtight container at room temperature for 2-3 days or freeze for up to 3 months.
