Ingredients
  

Muffin Batter
  • 1.5 cups all-purpose flour
  • 0.5 cups granulated sugar
  • 2 teaspoons baking powder
  • 0.5 teaspoons salt
  • 1 teaspoon ground cinnamon
  • 0.5 cups milk Can substitute with almond milk or other milk alternatives.
  • 0.25 cups vegetable oil
  • 1 large egg Can use a flax egg as a substitute.
  • 1 teaspoon vanilla extract
  • 0.25 cups melted butter
Cinnamon Sugar Coating
  • 0.25 cups granulated sugar For coating.
  • 1 teaspoon ground cinnamon For coating.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. In a large bowl, mix the flour, granulated sugar, baking powder, salt, and ground cinnamon.
  3. In another bowl, whisk together the milk, vegetable oil, egg, and vanilla extract until smooth.
  4. Combine the wet and dry ingredients until just mixed. Do not overmix.
  5. Spoon the batter into the muffin tin, filling each cup about 2/3 full.
Baking
  1. Bake for 15 to 18 minutes, or until the muffins turn golden brown and a toothpick inserted into the center comes out clean.
Coating
  1. While the muffins are baking, mix together 1/4 cup of granulated sugar and 1 teaspoon of cinnamon in a separate bowl.
  2. Once the muffins are cool, brush them with melted butter and roll them in the cinnamon sugar mixture before serving.

Notes

These muffins are best enjoyed warm with a hot beverage. They can also be served with icing or whipped cream for a sweeter treat. To store, keep them in an airtight container at room temperature for 2-3 days or freeze for up to 3 months.
