Ingredients
  

For the Cookie Dough
  • 1 cup unsalted butter, softened Ensure butter is at room temperature
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
For the Cream Cheese Filling
  • 8 oz cream cheese, softened Ensure cream cheese is softened
  • 1 teaspoon vanilla extract You can substitute with almond or lemon extract
  • 1/4 cup powdered sugar

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, mixing well after each addition.
  4. In another bowl, whisk together the flour, baking powder, cinnamon, and salt. Gradually add the dry ingredients to the wet mixture until combined.
  5. In a separate bowl, beat the cream cheese until smooth. Add the vanilla extract and powdered sugar, mixing until well combined.
Baking
  1. Scoop out dough for each cookie and create a small indentation in the center. Fill each indentation with the cream cheese mixture.
  2. Bake for 10-12 minutes or until the cookies are lightly golden.
  3. Allow to cool and enjoy!

Notes

Serve warm or at room temperature. Pairs well with milk, tea, or coffee. Can dust with additional powdered sugar for a sweeter touch.
