Preparation
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, whisk together the flour, sugar, baking powder, salt, and 1 teaspoon of cinnamon.
- In another bowl, mix the milk, vegetable oil, eggs, and vanilla extract.
- Combine the wet ingredients with the dry ingredients until just combined.
Baking
- Pour half of the batter into the prepared loaf pan.
- In a small bowl, mix the brown sugar and 1 tablespoon of cinnamon, then sprinkle half of this mixture over the batter.
- Pour the remaining batter on top and then sprinkle the rest of the cinnamon-sugar mixture.
- Drizzle melted butter over the top.
- Bake for 45-50 minutes or until a toothpick inserted into the center comes out clean.
- Let it cool before slicing and enjoy!
Notes
Serve warm, best with a pat of butter or alongside coffee or tea. For a special touch, sprinkle with powdered sugar before serving. Store wrapped at room temperature for 2-3 days or refrigerate for up to a week.
