Preparation
- Rinse the rice under cold water until the water runs clear.
Cooking
- In a medium pot, combine the rice, water (or broth), and olive oil (or butter). Bring to a boil over medium-high heat.
- Once boiling, reduce heat to low, cover, and simmer for about 18-20 minutes, or until the rice is tender and the liquid is absorbed.
- Remove from heat and let it sit, covered, for an additional 5 minutes.
Serving
- Fluff the rice with a fork, stir in the chopped cilantro, lime juice, and salt to taste. Serve warm.
Notes
Store leftovers in an airtight container in the refrigerator for up to three days. Reheat with a splash of water in the microwave. Variations include adding black beans, corn, or diced jalapeƱos for heat.
