  • 1 cup long-grain white rice Rinse thoroughly to remove excess starch.
  • 2 cups water or chicken broth Using chicken broth adds extra flavor.
  • 1 tablespoon olive oil or butter For enhanced flavor.
  • 1/4 cup fresh cilantro, chopped Adjust to taste.
  • 1 unit lime, juiced Adjust for more tartness if desired.
  • to taste unit Salt Add according to preference.

Method
 

Preparation
  1. Rinse the rice under cold water until the water runs clear.
Cooking
  1. In a medium pot, combine the rice, water (or broth), and olive oil (or butter). Bring to a boil over medium-high heat.
  2. Once boiling, reduce heat to low, cover, and simmer for about 18-20 minutes, or until the rice is tender and the liquid is absorbed.
  3. Remove from heat and let it sit, covered, for an additional 5 minutes.
Serving
  1. Fluff the rice with a fork, stir in the chopped cilantro, lime juice, and salt to taste. Serve warm.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Reheat with a splash of water in the microwave. Variations include adding black beans, corn, or diced jalapeƱos for heat.
