  • 3 cups quick cook oats
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter Softened, not melted.
  • 1 2/3 cups sugar
  • 1 cup peanut butter Creamy or crunchy based on preference.
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup chocolate chips Can use dark or white chocolate chips.

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the butter, sugar, and peanut butter until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla.
  4. In another bowl, mix the oats, salt, and chocolate chips.
  5. Gradually add the dry ingredients to the wet mixture.
  6. Drop spoonfuls of the cookie dough onto ungreased cookie sheets.
Baking
  1. Bake for 10-12 minutes or until lightly golden.
  2. Let the cookies cool before serving.

Notes

For best texture, ensure butter is soft but not melted. Do not overmix; mix until just combined for chewy cookies. Store in an airtight container at room temperature for about a week, or freeze for several months.
