- Break the dark chocolate into small pieces and melt gently in a heatproof bowl over simmering water or in the microwave. Let it cool slightly.
- In a separate bowl, whisk the egg whites with a pinch of salt until stiff peaks form, then slowly add the sugar while whisking until glossy.
- In another bowl, beat the heavy cream until soft peaks form.
- Mix the egg yolks into the melted chocolate until smooth, then gently fold in the egg whites and whipped cream until well combined.
- Spoon the mousse into serving bowls or glasses and chill in the refrigerator for at least 2 hours.
Notes
Make sure the chocolate is cooled before mixing it with the eggs to prevent them from cooking. Whip the cream and egg whites until they form stiff peaks for a light and airy mousse. Be gentle when folding to keep the mousse fluffy. Store leftovers in an airtight container for up to 3 days.
