Preparation
  1. Break the dark chocolate into small pieces and melt gently in a heatproof bowl over simmering water or in the microwave. Let it cool slightly.
  2. In a separate bowl, whisk the egg whites with a pinch of salt until stiff peaks form, then slowly add the sugar while whisking until glossy.
  3. In another bowl, beat the heavy cream until soft peaks form.
  4. Mix the egg yolks into the melted chocolate until smooth, then gently fold in the egg whites and whipped cream until well combined.
  5. Spoon the mousse into serving bowls or glasses and chill in the refrigerator for at least 2 hours.

Notes

Make sure the chocolate is cooled before mixing it with the eggs to prevent them from cooking. Whip the cream and egg whites until they form stiff peaks for a light and airy mousse. Be gentle when folding to keep the mousse fluffy. Store leftovers in an airtight container for up to 3 days.
