Ingredients
  

For the Mousse
  • 1 cup semisweet chocolate chips Use good quality chocolate for best flavor.
  • 2 tablespoons unsalted butter Melted with the chocolate chips.
  • 3 large eggs, separated Ensure the eggs are at room temperature for easier whipping.
  • 1/4 cup granulated sugar For mixing with egg yolks.
  • 1 cup heavy cream Chilled for whipping.
  • 1 teaspoon vanilla extract Enhances the flavor of the mousse.
  • A pinch of salt Added to egg whites for whipping.

Method
 

Preparation
  1. Melt the chocolate chips and butter in a double boiler or a heatproof bowl over simmering water. Stir until smooth. Remove from heat and let cool slightly.
  2. In a separate bowl, beat the egg yolks and granulated sugar together until the mixture is pale and creamy.
  3. Mix the cooled chocolate into the egg yolk mixture. Stir until well combined.
  4. In another bowl, beat the heavy cream and vanilla extract until stiff peaks form.
  5. Carefully fold the whipped cream into the chocolate mixture.
  6. In a clean bowl, beat the egg whites with a pinch of salt until stiff peaks form. Gently fold the egg whites into the chocolate mixture.
  7. Spoon the mousse into individual serving cups and refrigerate for at least 2 hours or until set.

Notes

Serve the chocolate mousse chilled, topped with whipped cream, chocolate shavings, or fresh berries. Keep covered in the refrigerator. It’s best eaten within 3-4 days but will stay good for a week if sealed.
