Preparation
- Preheat your oven to 350°F (175°C). Grease a mini muffin tin.
- In a bowl, mix the melted butter and sugar until well combined.
- Add the eggs and vanilla extract, mixing until smooth.
- In a separate bowl, combine the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Stir in the chocolate chips.
- Scoop the batter into the mini muffin tin, filling each cup about 2/3 full.
Baking
- Bake for 12-15 minutes, or until a toothpick comes out clean.
- Allow to cool before serving.
Notes
Store in an airtight container at room temperature for up to three days. Refrigerate for up to a week or freeze for three months. Wrap tightly for freezing.
