Ingredients
  

For the cookie base
  • 1.5 cups all-purpose flour
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 cup granulated sugar
  • 0.5 cup brown sugar
  • 0.5 cup unsalted butter, softened Make sure it's at room temperature.
  • 1 teaspoon vanilla extract
  • 1 large egg
For the cheesecake filling
  • 8 oz cream cheese, softened Allow to reach room temperature.
  • 0.5 cup sour cream Room temperature is ideal.
  • 0.5 cup chocolate chips Use good quality for the best flavor.

Method
 

Preparation and Mixing
  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix together the flour, baking soda, and salt; set aside.
  3. In another large bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth.
  4. Beat in the vanilla and egg until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until combined.
Assembling the Cheesecake
  1. Press half of the cookie dough into the bottom of a greased springform pan.
  2. In another bowl, mix the cream cheese, sour cream, and sugar until smooth.
  3. Fold in the chocolate chips and pour the cheesecake mixture over the cookie dough in the pan.
  4. Crumble the remaining cookie dough on top of the cheesecake filling.
Baking
  1. Bake for about 45-55 minutes, or until the edges are set and the center is slightly jiggly.
  2. Allow to cool, then refrigerate for at least 4 hours before serving.

Notes

Serve chilled. Top with extra chocolate chips, whipped cream, or chocolate sauce as desired. Store leftovers in an airtight container in the refrigerator for 3 to 5 days.
