Chocolate Cheesecake Filled and Ganache-Topped Cake

Ingredients
  

For the Chocolate Cake
  • 2 cups flour
  • 2 cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • 2 teaspoons baking powder
  • teaspoons baking soda
  • 1 teaspoon salt
  • 1 cup buttermilk
  • ½ cup vegetable oil
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup boiling water The batter will be thin.
For the Cheesecake Filling
  • 450 g cream cheese, at room temperature
  • ½ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
For the Chocolate Ganache
  • 1 cup bittersweet or semi-sweet chocolate chips
  • ½ cup heavy cream

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease and line two 9-inch (23 cm) cake pans with parchment paper.
  2. In a large mixing bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add buttermilk, oil, eggs, and vanilla extract, and beat until smooth.
  4. Stir in the boiling water to achieve a thin and glossy batter.
Make the Cheesecake Layer
  1. In another bowl, beat the cream cheese, sugar, vanilla, and egg until smooth and creamy.
Assemble and Bake
  1. Pour half of the chocolate batter evenly into both pans.
  2. Gently spoon the cheesecake mixture over the batter.
  3. Pour the remaining chocolate batter on top and bake for 35–40 minutes, or until a toothpick comes out clean.
  4. Allow the cakes to cool completely on a wire rack.
Prepare the Ganache
  1. In a small saucepan, heat the heavy cream over medium heat until just about to boil.
  2. Remove from heat and pour over the chocolate chips. Let it sit for 5 minutes, then stir until smooth and shiny.
Assemble the Cake
  1. Place one cake layer on a serving plate and spread a bit of ganache on top.
  2. Add the second cake layer and pour the remaining ganache over the cake, letting it drip down the sides.
  3. Chill for at least 30 minutes before slicing.

Notes

Use room-temperature ingredients for a smoother batter and filling. Add a pinch of espresso powder to enhance the chocolate flavor. For a luxurious finish, decorate with chocolate curls, fresh berries, or gold leaf.
