Ingredients
  

Dry Ingredients
  • 1.75 cups all-purpose flour
  • 1.5 cups granulated sugar
  • 0.75 cups unsweetened cocoa powder Use high-quality cocoa powder for the best taste.
  • 1.5 teaspoons baking powder
  • 1.5 teaspoons baking soda
  • 1 teaspoon salt
Wet Ingredients
  • 2 large eggs Make sure eggs are at room temperature.
  • 1 cup whole milk Make sure milk is at room temperature.
  • 0.5 cups vegetable oil
  • 2 teaspoons vanilla extract You can substitute with almond extract for a different aroma.
  • 1 cup boiling water Do not skip boiling water; it enhances cocoa flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round baking pans.
  2. In a large bowl, combine all dry ingredients: flour, sugar, cocoa powder, baking powder, baking soda, and salt. Mix well.
  3. Add eggs, milk, vegetable oil, and vanilla extract. Beat on medium speed for 2 minutes.
  4. Stir in boiling water until well combined. The batter will be thin.
  5. Pour the batter evenly into the prepared pans.
Baking
  1. Bake for 30 to 35 minutes or until a toothpick inserted into the center comes out clean.
Cooling
  1. Cool for 10 minutes in the pans before transferring to wire racks to cool completely.

Notes

Serve the chocolate cake plain or with your favorite frosting. A chocolate ganache or cream cheese frosting pairs wonderfully. Store any leftovers in an airtight container at room temperature for up to three days or in the fridge for longer storage. You can also freeze the cake wrapped in plastic wrap and foil for up to three months.
