  • 4 large large flour tortillas For wrapping the filling.
  • 2 cups cooked shredded chicken Can substitute with beef if desired.
  • 1 cup shredded cheese Use cheddar or a Mexican blend.
  • 1 can refried beans For extra creaminess.
  • 1 cup salsa For flavor and moisture.
  • 1 teaspoon cumin Adds depth of flavor.
  • 1 teaspoon chili powder For a little heat.
  • Oil for frying Oil for frying Use vegetable or canola oil.
  • Sour cream and guacamole For serving.

Method
 

Preparation
  1. In a bowl, mix the shredded chicken, refried beans, salsa, cheese, cumin, and chili powder together until well combined.
  2. Place a generous amount of the filling in the center of each tortilla.
  3. Fold the sides of the tortilla in, then roll it up tightly to form a burrito shape.
Cooking
  1. Heat oil in a deep skillet over medium heat.
  2. Carefully place the chimichangas in the hot oil, seam side down, and fry until golden brown and crispy, about 3-4 minutes per side.
  3. Remove and drain on paper towels.
Serving
  1. Serve with sour cream and guacamole.

Notes

Chimichangas are best served hot and fresh. Adding some fresh salsa or a sprinkle of chopped cilantro can also enhance the flavor.
