Ingredients
  

Main Ingredients
  • 2 cups cooked shredded beef (or chicken) Can also use shredded chicken
  • 1 cup shredded cheese (cheddar or Mexican blend) Choose your favorite cheese
  • 1/2 cup refried beans (optional) Optional ingredient for added flavor
  • 4 large flour tortillas Use large tortillas for easier wrapping
  • Oil for frying Oil for frying Use enough to submerge the chimichangas
  • to taste Sour cream and salsa for serving (optional) Optional toppings

Method
 

Preparation
  1. Heat the refried beans in a small pot over medium heat until warm.
  2. Lay a flour tortilla on a flat surface and spread a tablespoon of refried beans (if using) in the center.
  3. Add a portion of the shredded beef and shredded cheese on top.
  4. Fold the sides of the tortilla in and roll it up tightly from the bottom to form a burrito.
  5. Repeat with the remaining tortillas and filling.
Cooking
  1. In a deep skillet or fryer, heat oil to 350°F (175°C).
  2. Carefully add the chimichangas to the hot oil, a few at a time, and fry until golden brown and crispy, about 3-4 minutes each side.
  3. Remove and drain on paper towels.

Notes

Serve chimichangas hot and crispy for the best taste. You can add a dollop of sour cream and some salsa on the side for dipping. They also go well with guacamole or a fresh salad. Don't forget some extra cheese on top if you love it cheesy! Make sure the oil is hot enough before adding the chimichangas to get that perfect crunch. Don’t overcrowd the skillet; fry a few at a time for even cooking.
