Ingredients
  

Filling
  • 1 lb lean ground beef
  • 1 cup shredded sharp cheddar cheese
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper, to taste
Chimichanga Assembly
  • 6 large flour tortillas
  • Vegetable oil, for frying Amount depends on frying method

Method
 

Preparation
  1. Heat a bit of oil in a skillet over medium heat. Add the onions and cook until golden.
  2. Stir in the garlic and ground beef, cooking until browned.
Seasoning
  1. Mix in cumin, chili powder, salt, and pepper. Remove from heat and stir in the shredded cheddar cheese until it melts into the beef mixture.
Assembly
  1. Spoon the filling onto each tortilla, roll tightly, and tuck in the ends to seal.
Frying
  1. In hot oil, fry the chimichangas seam-side down for about 3–4 minutes per side, until golden and crunchy.
  2. Drain on paper towels.
Serve
  1. Serve warm with salsa, guacamole, or sour cream for dipping.
