Main Ingredients
  • 2 pieces boneless, skinless chicken breasts
  • 6 pieces hoagie rolls
  • 6 slices provolone cheese
  • 1 piece green bell pepper, sliced
  • 1 piece red bell pepper, sliced
  • 1 large onion, sliced
  • 2 cups chicken broth
  • 2 tablespoons olive oil For drizzling
Seasonings
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • Salt, to taste
  • Black pepper, to taste

Method
 

Preparation
  1. Lightly drizzle the bottom of a slow cooker with olive oil.
  2. Add the sliced onion and bell peppers, then place the chicken breasts on top.
  3. Season the chicken with garlic powder, onion powder, Italian seasoning, salt, and black pepper.
  4. Pour the chicken broth around the chicken.
  5. Cover and cook until the chicken is tender enough to shred easily.
Shredding Chicken
  1. Remove the chicken, shred it with two forks, and return it to the slow cooker. Mix it well with the peppers and cooking juices.
Assembling Sandwiches
  1. Slice the hoagie rolls open and lightly toast them if desired.
  2. Fill each roll with the shredded chicken and pepper mixture.
  3. Top with provolone cheese and place the sandwiches under the broiler or in the oven just until the cheese is melted.

Notes

Serve hot with optional toppings like mayonnaise, hot sauce, or extra vegetables. Pair with fries or a side salad for a complete meal.
