A crispy, golden, cheese-loaded sandwich that can be made in under 15 minutes, perfect for using up leftover chicken and customizable to your taste.

Ingredients
  

Filling
  • 2 cups shredded cooked chicken Rotisserie chicken works perfectly here.
  • 1 cup shredded cheese Cheddar is classic, but feel free to use any cheese.
  • 1/2 cup mayo Binds the filling together.
  • 1 tbsp Dijon mustard Adds tangy depth.
Bread
  • 4 slices bread Any type of bread works; sourdough gives a great crust.

Method
 

Preparation
  1. In a medium mixing bowl, combine the shredded chicken, shredded cheese, mayo, and Dijon mustard. Stir until fully mixed.
  2. Taste and adjust seasoning with salt and pepper if desired.
Building Sandwiches
  1. Divide the chicken mixture evenly between two slices of bread and top with another slice.
Cooking
  1. Lightly butter the outside faces of each sandwich.
  2. Heat a skillet over medium heat. Cook the sandwiches for 3-4 minutes on one side until golden brown.
  3. Flip and cook for an additional 3-4 minutes until golden and the cheese is melted.
Serving
  1. Remove from skillet, slice diagonally, and serve immediately.

Notes

These sandwiches can be customized with add-ins like spinach, bell peppers, jalapeƱos or avocado. They store for up to 2 days in the refrigerator.
