Ingredients
  

For the filling
  • 2 cups cooked chicken, shredded Use rotisserie chicken for convenience.
  • 1/2 cup mayonnaise
  • 1 tbsp mustard
  • Salt and pepper to taste
  • 4 slices bread Try different types of bread for variety.
  • Lettuce leaves
  • Tomato slices (optional)

Method
 

Preparation
  1. In a bowl, mix the shredded chicken, mayonnaise, mustard, salt, and pepper until well combined.
  2. Toast the bread slices if desired.
Assembly
  1. On two slices of bread, layer some lettuce leaves and tomato slices.
  2. Spoon the chicken mayo mixture onto the lettuce.
  3. Top with the remaining slices of bread to complete the sandwiches.
  4. Cut in half and serve.

Notes

These sandwiches can be served hot or cold. If you have leftovers, store them in the refrigerator for a day or two. For extra crunch, add diced celery or pickles to the chicken mixture. For added flavor, sprinkle some herbs like dill or parsley into the mixture.
