- In a bowl, mix the shredded chicken, mayonnaise, mustard, salt, and pepper until well combined.
- Toast the bread slices if desired.
Assembly
- On two slices of bread, layer some lettuce leaves and tomato slices.
- Spoon the chicken mayo mixture onto the lettuce.
- Top with the remaining slices of bread to complete the sandwiches.
- Cut in half and serve.
Notes
These sandwiches can be served hot or cold. If you have leftovers, store them in the refrigerator for a day or two. For extra crunch, add diced celery or pickles to the chicken mixture. For added flavor, sprinkle some herbs like dill or parsley into the mixture.
