Preparation
- In a bowl, combine the shredded chicken, mayonnaise, Dijon mustard, salt, and pepper. Mix well.
- Toast the bread slices if desired.
- Spread the chicken mixture evenly on two slices of bread.
- Add lettuce leaves and tomato slices on top.
- Place the other two slices of bread on top to close the sandwiches.
- Cut in half and serve.
Notes
Serve with extra lettuce or tomato on the side. Pack for lunch, but best enjoyed fresh. Store leftovers wrapped tightly in plastic wrap or in an airtight container in the refrigerator for up to two days.
