Ingredients
  

Marinade Ingredients
  • 1 cup olive oil
  • 1/2 cup soy sauce
  • 1/4 cup balsamic vinegar
  • 1/4 cup lemon juice
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 tablespoon fresh herbs (such as thyme or rosemary)

Method
 

Preparation
  1. In a bowl, whisk together olive oil, soy sauce, balsamic vinegar, lemon juice, honey, garlic, fresh herbs, salt, and pepper.
  2. Place chicken in a resealable bag or shallow dish and pour the marinade over the chicken.
  3. Seal the bag or cover the dish and refrigerate for at least 30 minutes or up to overnight.
Cooking
  1. Preheat grill or oven to medium-high heat.
  2. Remove chicken from marinade and discard marinade.
  3. Cook chicken on the grill or in the oven until the internal temperature reaches 165°F (75°C).
Serving
  1. Serve the marinated chicken hot off the grill or oven, garnished with fresh herbs or a lemon wedge.

Notes

For best flavor, marinate chicken for at least 1 hour, ideally overnight. Adjust the sweetness or tang by varying honey and vinegar. Avoid marinating too long to prevent mushiness from acidic ingredients.
