Marinade Ingredients
  • 1 cup olive oil Extra virgin for better flavor
  • 1/2 cup soy sauce Low sodium recommended
  • 1/4 cup balsamic vinegar
  • 1/4 cup lemon juice Freshly squeezed is best
  • 2 tablespoons honey Adjust based on sweetness preference
  • 2 cloves garlic, minced Add more for a stronger garlic flavor
  • 1 tablespoon fresh herbs (such as thyme or rosemary) Feel free to mix and match herbs
  • to taste Salt and pepper Use fresh-ground pepper for best results

Method
 

Preparation
  1. In a bowl, whisk together olive oil, soy sauce, balsamic vinegar, lemon juice, honey, garlic, fresh herbs, salt, and pepper.
  2. Place chicken in a resealable bag or shallow dish and pour the marinade over the chicken.
  3. Seal the bag or cover the dish and refrigerate for at least 30 minutes or up to overnight.
Cooking
  1. Preheat grill or oven to medium-high heat.
  2. Remove chicken from marinade and discard marinade.
  3. Cook chicken on the grill or oven until the internal temperature reaches 165°F (75°C).
Serving
  1. Serve the marinated chicken hot off the grill or oven with your choice of sides.

Notes

For the best flavor, marinate chicken for at least 1 hour or overnight. Adjust sweetness and tang by varying honey and vinegar amounts. Avoid over-marinating with acidic ingredients.
