  • 2 pieces boneless, skinless chicken breasts Seasoned with salt and pepper
  • 2 tablespoons olive oil For cooking the chicken
  • 8 ounces fettuccine pasta Cook according to package instructions
  • 1 cup heavy cream For the sauce
  • 1 cup grated Parmesan cheese Use freshly grated for best flavor
  • 2 cloves garlic, minced For flavoring the sauce
  • to taste salt and pepper For seasoning
  • to taste fresh parsley, chopped For garnish

Method
 

Cooking Chicken
  1. Season the chicken breasts with salt and pepper.
  2. In a skillet, heat the olive oil over medium heat.
  3. Add the chicken breasts and cook for about 7-8 minutes on each side or until cooked through.
  4. Remove the chicken and let it rest.
Cooking Pasta and Sauce
  1. While the chicken cooks, boil the fettuccine pasta according to package instructions. Drain and set aside.
  2. In the same skillet, add minced garlic and sauté for about 1 minute.
  3. Pour in the heavy cream and bring to a simmer.
  4. Add the grated Parmesan cheese and stir until melted and smooth.
  5. Slice the chicken and add it to the Alfredo sauce. Mix in the cooked fettuccine.
Serving
  1. Serve hot, garnished with fresh parsley.

Notes

Store any leftovers in an airtight container in the fridge for up to 3 days. For freezing, the sauce texture may change when thawed. You can also add vegetables like broccoli or peas for extra nutrition.
