Ingredients
  

For the crust
  • 1.5 cups crushed graham crackers or vanilla wafers You can use either for the crust.
  • 0.75 cups finely chopped pecans Pecans should be lightly toasted.
  • 0.5 cups unsalted butter Butter should be melted.
For the cheesecake layer
  • 1 package cream cheese Ensure it is at room temperature.
  • 0.5 cups sugar Granulated sugar.
  • 1 can cherry pie filling Can be substituted with other fruit pie fillings.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the crushed graham crackers or vanilla wafers, chopped pecans, and melted butter. Mix well until everything is combined.
  3. Press the mixture firmly into the bottom of a 9x9-inch baking dish to form the crust.
  4. Bake the crust for about 10 minutes or until lightly golden.
  5. Allow the crust to cool while you prepare the cheesecake layer.
Assembly
  1. In another bowl, mix the cream cheese and sugar until the mixture is smooth.
  2. Spread the cream cheese mixture over the cooled crust.
  3. Top with cherry pie filling.
  4. Refrigerate the dish for several hours before serving.

Notes

Serve chilled. Adding a dollop of whipped cream on top can enhance the flavor. Cover leftovers with plastic wrap or aluminum foil and store in the refrigerator for 3-5 days.
