Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the crushed graham crackers or vanilla wafers, chopped pecans, and melted butter. Mix well until everything is combined.
- Press the mixture firmly into the bottom of a 9x9-inch baking dish to form the crust.
- Bake the crust for about 10 minutes or until lightly golden.
- Allow the crust to cool while you prepare the cheesecake layer.
Assembly
- In another bowl, mix the cream cheese and sugar until the mixture is smooth.
- Spread the cream cheese mixture over the cooled crust.
- Top with cherry pie filling.
- Refrigerate the dish for several hours before serving.
Notes
Serve chilled. Adding a dollop of whipped cream on top can enhance the flavor. Cover leftovers with plastic wrap or aluminum foil and store in the refrigerator for 3-5 days.
