  • 1 pound lean ground beef
  • 4-6 medium Russet potatoes
  • 1 packet (1 ounce) taco seasoning
  • 1/2 cup water
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup sour cream
  • to taste Chopped green onions for garnish

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C). Wash and poke holes in the Russet potatoes.
  2. Bake them in the oven for 45-60 minutes or until tender.
  3. In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  4. Add taco seasoning and water to the beef, mix well, and let it simmer for 5-7 minutes.
Assembly
  1. Once potatoes are cooked, cut them in half and scoop out a bit of the inside to create space for the filling.
  2. Mix the scooped potato with the beef mixture and shredded cheese.
  3. Stuff the potato skins with the beef mixture and top with more cheese.
Cooking
  1. Return stuffed potatoes to the oven for an additional 10-15 minutes until cheese is melted.
Serving
  1. Serve hot, topped with sour cream and chopped green onions.

Notes

For an extra kick, try adding diced jalapeños or hot sauce to the beef mixture. You can use turkey or chicken instead of ground beef for a lighter option. Experiment with different types of cheese, like pepper jack or mozzarella, for varied flavors. If you want to save time, you can microwave the potatoes instead of baking them.
