Main Ingredients
  • 1 pound lean ground beef Use lean for less fat.
  • 4 to 6 medium Russet potatoes Other types of potatoes can be used.
  • 1 packet taco seasoning 1 ounce.
  • 1/2 cup water
  • 1 cup shredded cheese Cheddar or your choice.
  • to taste Sour cream and green onions Optional for serving.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Wash and prick the potatoes with a fork, then wrap them in foil. Bake in the oven for 45-60 minutes until tender.
  3. In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  4. Stir in the taco seasoning and water. Let it simmer for about 5 minutes.
Assembly
  1. Once the potatoes are done baking, remove them from the oven and let them cool slightly. Slice them open.
  2. Spoon the taco beef mixture into the potatoes, top with shredded cheese, and return to the oven for 5-10 minutes until the cheese is melted.
Serving
  1. Serve hot, topped with sour cream and green onions if desired.

Notes

For extra flavor, consider adding chopped onions and bell peppers to your ground beef while it cooks. To light up the dish, substitute ground beef with lean turkey or plant-based protein.
