  • 1 packet taco seasoning Choose your preferred brand.
  • 1 small bag frozen corn
  • 1 can Rotel For extra spice, use hot Rotel.
  • 6–8 oz macaroni
  • 2 cups cheddar cheese Can be replaced with other cheeses for variation.
  • 2 cups broth or water Broth adds more flavor.

Cooking
  1. In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat.
  2. Add taco seasoning to the beef, stirring to combine.
  3. Stir in frozen corn, Rotel, and macaroni along with broth or water.
  4. Bring to a boil, then reduce heat and simmer until macaroni is cooked.
  5. Stir in cheddar cheese until melted and creamy. Serve warm.

Notes

This dish pairs well with a side salad or tortilla chips. Top with sour cream, diced tomatoes, or jalapeños for extra flavor. Store leftovers in an airtight container for 3-4 days.
