Main Ingredients
  • 4 pieces bell peppers Firm and fresh peppers are best.
  • 1 cup cooked rice
  • 1 cup ground beef or turkey Can be substituted with beans or lentils for a vegetarian option.
  • 1 cup shredded cheese Cheddar, mozzarella, or pepper jack cheeses work well.
  • 1/2 cup diced tomatoes
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper
  • as needed Olive oil spray For greasing the Air Fryer basket.

Method
 

Preparation
  1. Cut the tops off the bell peppers and remove the seeds.
  2. In a bowl, mix cooked rice, ground meat, diced tomatoes, garlic powder, onion powder, salt, and pepper.
  3. Stuff the mixture into each bell pepper.
  4. Sprinkle shredded cheese on top of each stuffed pepper.
Cooking
  1. Spray the inside of the Air Fryer basket with olive oil.
  2. Place the stuffed peppers upright in the basket.
  3. Cook at 360°F for 15-20 minutes, or until the peppers are tender and cheese is melted.

Notes

Great served with a side salad or crusty bread. Delicious when reheated for lunch the next day. Customize the filling with other vegetables for added nutrition.
