For the Stuffed Peppers
  • 4 pieces bell peppers Choose ripe and firm peppers for the best flavor.
  • 1 cup cooked rice You can substitute quinoa for a different flavor.
  • 1 cup shredded cheese (cheddar or mozzarella) Feel free to mix different types of cheeses.
  • 1 cup ground meat (beef, chicken, or turkey) You can also use beans or lentils for a vegetarian option.
  • 1 can diced tomatoes
  • 1 teaspoon Italian seasoning Adjust seasoning to your preference.
  • to taste Salt and pepper

Method
 

Preparation
  1. Preheat the Air Fryer to 350°F (175°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a bowl, mix together cooked rice, ground meat, diced tomatoes, cheese, Italian seasoning, salt, and pepper.
  4. Stuff the mixture into each bell pepper until full.
Cooking
  1. Place the stuffed peppers in the Air Fryer basket.
  2. Cook for 12-15 minutes, or until the peppers are tender and the cheese is bubbly.
Serving
  1. Serve hot, optionally accompanied by a fresh salad or some crusty bread.
  2. You can also serve them with your favorite dipping sauce.

Notes

Leftovers can be stored in an airtight container in the fridge for up to three days. For longer storage, wrap each stuffed pepper tightly and freeze for up to three months.
