Ingredients
  

Main Ingredients
  • 4 pieces bell peppers Use firm and fresh peppers for best texture.
  • 1 cup cooked rice Can be substituted with quinoa for a healthier option.
  • 1 cup ground beef or turkey You can swap the meat for beans or lentils for a vegetarian version.
  • 1 cup shredded cheese Cheddar is popular, but mozzarella or pepper jack works too.
  • 1/2 cup diced tomatoes
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper
  • as needed Olive oil spray

Method
 

Preparation
  1. Cut the tops off the bell peppers and remove the seeds.
  2. In a bowl, mix cooked rice, ground meat, diced tomatoes, garlic powder, onion powder, salt, and pepper.
  3. Stuff the mixture into each bell pepper.
  4. Sprinkle shredded cheese on top of each stuffed pepper.
  5. Spray the inside of the Air Fryer basket with olive oil.
  6. Place the stuffed peppers upright in the basket.
Cooking
  1. Cook at 360°F for 15-20 minutes, or until the peppers are tender and cheese is melted.
Serving
  1. Serve hot and enjoy! Cheesy Stuffed Peppers are great as a main dish with a side salad or crusty bread.

Notes

To store leftovers, cool them completely, place in an airtight container, and keep in the refrigerator for up to 3-4 days. They can also be frozen for up to 2 months.
