  • 1 cup Rotel diced tomatoes Choose mild or spicy Rotel to adjust heat
  • 4 pieces soft tortillas Use your favorite type of tortillas
  • 1 cup cheese (cheddar or your choice) Shredded cheese works best

Method
 

Cooking
  1. Heat olive oil in a skillet over medium heat.
  2. Add the diced onion and cook until softened.
  3. Add the ground beef and cook until browned.
  4. Stir in the taco seasoning and Rotel tomatoes, cooking until heated through.
  5. Warm the soft tortillas.
