  • 1 can Rotel tomatoes (diced tomatoes with green chilies)
  • 2 cups pasta (elbow, rotini, or your choice) Make sure it cooks evenly in the broth.
  • 1 cup shredded cheese (cheddar or a cheese blend) Can add more for creaminess.
  • 2 cups beef broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Method
 

Preparation
  1. Turn the crockpot on HIGH.
  2. In a skillet, brown the ground beef until fully cooked.
  3. Drain the beef and add it to the crockpot.
  4. Stir in the Rotel tomatoes, beef broth, garlic powder, onion powder, salt, and pepper.
  5. Add the pasta to the crockpot and ensure it is submerged in the liquid.
  6. Cover and cook on HIGH for about 30 minutes or until the pasta is tender.
  7. Stir in the shredded cheese until melted, then serve hot.

Notes

Serve hot, garnished with extra cheese, chopped green onions, or a dollop of sour cream. Pairs well with a side salad or garlic bread. To store leftovers, let cool and transfer to an airtight container. Refrigerate for up to 3-4 days or freeze for 2-3 months.
