  • 1 packet taco seasoning Follow package instructions for water
  • 2 large flour tortillas
  • 1 cup Spanish rice Prepared according to your recipe or package instructions
  • 1 cup nacho cheese
  • 1/4 cup chipotle sauce
  • 1 cup shredded cheese Optional, for added flavor

Method
 

Preparation
  1. In a pan over medium heat, cook the ground beef until browned. Drain excess grease.
  2. Add the taco seasoning to the beef along with water as directed on the packet, and cook according to package instructions.
  3. Prepare Spanish rice according to your recipe or package instructions.
Cooking
  1. Heat a large skillet over medium heat and place one tortilla on the skillet.
  2. Layer half of the nacho cheese, cooked beef mixture, Spanish rice, and chipotle sauce on the tortilla.
  3. Top with a second tortilla, then flip and cook until both sides are golden brown and the cheese is melted.
Serving
  1. Serve the Cheesy Quesarito hot, straight from the skillet. You can cut it in half for easier handling.
  2. Add toppings like sour cream, guacamole, or salsa to enhance the flavor.

Notes

If you have leftovers, wrap the Cheesy Quesarito in foil or plastic wrap and place it in the refrigerator for about 2 to 3 days. Reheat in the microwave or skillet before eating. Use lean ground beef to reduce fat content, and feel free to add veggies, like bell peppers or onions, for extra flavor. For a crunch, try adding some crushed tortilla chips inside before cooking.
