  • 1 lb ground beef Use lean ground beef to cut down on fat.
  • 1 packet taco seasoning Follow package instructions for seasoning.
  • 2 large flour tortillas
  • 1 cup Spanish rice Prepare as per package instructions.
  • 1 cup nacho cheese
  • 2 tablespoons chipotle sauce
  • 1 cup shredded cheese (cheddar or Mexican blend) You can try different types of cheese.

Method
 

Preparation
  1. Cook the ground beef in a skillet over medium heat until browned. Drain the excess fat.
  2. Stir in the taco seasoning according to package instructions.
  3. Prepare the Spanish rice as per package instructions.
  4. On one tortilla, layer the Spanish rice, seasoned beef, nacho cheese, and chipotle sauce.
  5. Cover with a second tortilla and sprinkle shredded cheese on top.
Cooking
  1. In a pan, cook the assembled quesadilla over medium heat until the tortillas are golden brown and the cheese is melted, about 3-4 minutes per side.
Serving
  1. Slice and serve warm. Serve hot off the pan with sides of salsa, guacamole, or sour cream for dipping.

Notes

If you have leftovers, let the Cheesy Quesarito cool down, then wrap it tightly in plastic wrap or foil. Store in the fridge for up to 3 days. For reheating, place it in a skillet over medium heat until warmed through. You can prepare the filling ahead of time and assemble the quesadilla when you're ready to eat.
