Preparation

- On one tortilla, layer the Spanish rice, seasoned beef, nacho cheese, and chipotle sauce.
- Cover with a second tortilla and sprinkle shredded cheese on top.
Cooking
- In a pan, cook the assembled quesadilla over medium heat until the tortillas are golden brown and the cheese is melted, about 3-4 minutes per side.
Serving
- Slice and serve warm. Serve hot off the pan with sides of salsa, guacamole, or sour cream for dipping.
Notes
If you have leftovers, let the Cheesy Quesarito cool down, then wrap it tightly in plastic wrap or foil. Store in the fridge for up to 3 days. For reheating, place it in a skillet over medium heat until warmed through. You can prepare the filling ahead of time and assemble the quesadilla when you're ready to eat.
