  • 2 lbs potatoes, peeled and diced
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk
  • 1/4 cup butter, melted
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • 1 cup crushed cornflakes (optional, for topping)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large pot, boil the diced potatoes until tender, about 10-15 minutes. Drain and allow to cool slightly.
  3. In a large mixing bowl, combine the sour cream, milk, melted butter, garlic powder, onion powder, salt, and pepper.
  4. Add the cooked potatoes to the mixture and gently fold in half of the shredded cheese.
  5. Transfer the potato mixture to a greased 9x13 inch baking dish.
  6. Sprinkle the remaining cheese on top, followed by crushed cornflakes if using.
Cooking
  1. Bake in the preheated oven for 30-35 minutes, or until bubbly and golden on top.
  2. Let cool slightly before serving.

Notes

Serve warm alongside proteins or with a salad. Store leftovers in an airtight container in the refrigerator for 3-5 days, or freeze for longer storage. Will stay fresh if wrapped well.
