Preparation
- Preheat your oven to 350°F (175°C).
- In a large pot, boil the diced potatoes until tender, about 10-15 minutes. Drain and allow to cool slightly.
- In a large mixing bowl, combine the sour cream, milk, melted butter, garlic powder, onion powder, salt, and pepper.
- Add the cooked potatoes to the mixture and gently fold in half of the shredded cheese.
- Transfer the potato mixture to a greased 9x13 inch baking dish.
- Sprinkle the remaining cheese on top, followed by crushed cornflakes if using.
Cooking
- Bake in the preheated oven for 30-35 minutes, or until bubbly and golden on top.
- Let cool slightly before serving.
Notes
Serve warm alongside proteins or with a salad. Store leftovers in an airtight container in the refrigerator for 3-5 days, or freeze for longer storage. Will stay fresh if wrapped well.
