  • 4 cups shredded mozzarella cheese
  • 8 pieces low-carb tortillas
  • 1/2 cup pizza sauce Thin layer to spread on tortillas
  • 48 slices pepperoni

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Lay out the tortillas and spread a thin layer of pizza sauce on each one.
  3. Sprinkle mozzarella cheese evenly over the sauce on each tortilla.
  4. Place pepperoni slices on top of the cheese.
  5. Roll up each tortilla tightly and place them seam-side down on a baking sheet.
Baking
  1. Bake in the preheated oven for about 15-20 minutes, or until the tortillas are golden and the cheese is melted.
  2. Slice into pieces and serve warm.

Notes

For added flavor, mix in some chopped vegetables like bell peppers or onions. Use different types of cheese, like cheddar or pepper jack, for a unique twist. Make sure to roll the tortillas tightly to prevent the cheese from oozing out while baking. These roll-ups can also be frozen before baking.
