  • 1 small onion, diced Shallots can be used as a substitute.
  • 4 cups beef broth Use low-sodium broth if desired.
  • 2 cups shredded cheddar cheese Feel free to mix with other cheeses.
  • 1 cup milk Low-fat milk can be used for a lighter version.
  • Salt and pepper to taste Adjust according to preference.

  1. In a large pot, brown the ground beef over medium heat.
  2. Add the diced onion and cook until translucent.
  3. Stir in the diced potatoes and beef broth.
  4. Bring to a boil, then reduce heat and let simmer until the potatoes are tender.
  5. Add the milk and shredded cheddar cheese, stirring until the cheese is melted.
  6. Season with salt and pepper to taste.
  7. Serve hot.

Notes

Top with extra shredded cheese or chopped green onions. Great with crusty bread or a simple salad. For thicker soup, mash some potatoes before adding cheese. Optionally add vegetables like carrots or celery.
