  • 2 cups cooked white or jasmine rice
  • 1 container (24 oz) prepared mashed potatoes
  • 1 can (15 oz) whole kernel corn, drained
  • 1 1/4 cups garlic Parmesan sauce or gravy
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup cooked bacon, crumbled
  • 1/4 cup sliced green onions
Spices and Extras
  • 1 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning
  • 1 tablespoon butter (optional, for the rice)
  • Salt and freshly ground black pepper, to taste
  • Chopped fresh parsley, for garnish (optional)

Method
 

Preparation
  1. Cook the popcorn chicken according to the package directions until crispy and golden.
  2. Warm the mashed potatoes and corn until heated through. Toss the hot rice with butter if desired and season lightly with salt and pepper.
  3. In a small saucepan over medium-low heat, combine the garlic Parmesan sauce with the garlic powder and Italian seasoning. Stir until smooth and warmed through.
Assembly
  1. Divide the warm rice evenly among four serving bowls. Add a generous scoop of mashed potatoes and spoon the sweet corn alongside.
  2. Place the crispy popcorn chicken over the rice and vegetables.
  3. Generously drizzle the warm garlic Parmesan sauce over the chicken.
  4. Sprinkle the mozzarella and Parmesan over the hot bowls, allowing the cheese to melt slightly.

Notes

Serve warm, straight from the kitchen. Garnish with chopped fresh parsley for added color and flavor. Enjoy with a side salad or your favorite drink. For extra flavor, add your favorite vegetables like steamed broccoli. If you like it spicy, sprinkle crushed red pepper flakes on top before serving.
