Preparation
- Preheat your oven to 375°F (190°C) and lightly grease a baking dish with olive oil or cooking spray.
- In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute.
- Add the chopped mushrooms, thyme, parsley, and a pinch of salt and pepper. Cook for 5–7 minutes until the mushrooms are tender.
- Transfer the cooked mushroom mixture to a bowl and stir in cream cheese and mozzarella until combined.
- Create pockets in the chicken breasts and fill with the creamy mushroom mixture. Secure with toothpicks, if necessary.
- Arrange the stuffed chicken in the baking dish, sprinkle with Parmesan, and bake for 25–30 minutes.
- Let the chicken rest for a few minutes before serving. Garnish with fresh parsley.
