  • 4 pieces boneless, skinless chicken breasts Use even-sized for uniform cooking.
  • 1 cup mushrooms, finely chopped
  • 1/2 cup cream cheese, softened Let it soften at room temperature.
  • 1/2 cup shredded mozzarella cheese
  • 3 tablespoons butter For sautéing.
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme Herb for flavor.
  • 1 teaspoon dried parsley Herb for flavor.

  • 1/4 cup grated Parmesan cheese For topping.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish with olive oil or cooking spray.
  2. In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute.
  3. Add the chopped mushrooms, thyme, parsley, and a pinch of salt and pepper. Cook for 5–7 minutes until the mushrooms are tender.
  4. Transfer the cooked mushroom mixture to a bowl and stir in cream cheese and mozzarella until combined.
  5. Create pockets in the chicken breasts and fill with the creamy mushroom mixture. Secure with toothpicks, if necessary.
  6. Arrange the stuffed chicken in the baking dish, sprinkle with Parmesan, and bake for 25–30 minutes.
  7. Let the chicken rest for a few minutes before serving. Garnish with fresh parsley.

Notes

Let chicken rest before cutting to retain juices. Prepare chicken one day ahead and refrigerate.
