  • 1 lb beef stew meat or cubed beef
  • 3–4 pieces russet potatoes, diced Diced into small, even chunks.
  • 2 cups broccoli florets
  • 2 ears corn, cut into rounds or 1 cup kernels Use whole ears or canned/ frozen kernels.
  • 1 block Velveeta cheese, cubed
  • 1–2 tbsp olive oil
  • Salt and black pepper, to taste
  • Optional: garlic powder, paprika, Italian seasoning

Preparation
  1. Prepare all your ingredients by dicing the potatoes and cutting the corn into rounds.
  2. In a large bowl, combine beef, potatoes, broccoli, and corn. Drizzle with olive oil and season with salt, pepper, and any additional spices. Toss until evenly coated.
  3. Lay out large sheets of aluminum foil and divide the mixture into portions, adding cheese cubes on top of each.
  4. Fold the foil tightly into sealed packets.
Cooking Methods
  1. For the oven: Preheat to 400°F (200°C) and bake for 30–40 minutes until potatoes are tender and beef is cooked.
  2. For the grill: Cook on a medium heat grill for 25–30 minutes, flipping halfway through.

Notes

Carefully open packets to avoid steam. Serve in foil for rustic presentation or transfer to a plate. You can add mushrooms, bell peppers, or onions for variety; try swapping the cheese for cheddar or mozzarella.
