- In a large bowl, toss the sliced squash or zucchini with olive oil, salt, garlic powder, and black pepper.
- Arrange the rounds in a single layer on a baking sheet.
- Sprinkle the shredded cheese evenly over the rounds. If using, also sprinkle breadcrumbs on top for added crunch.
Cooking
- Bake in the preheated oven for 15-20 minutes or until the squash is tender and the cheese is melted and golden.
- Remove from the oven and let cool slightly before serving.
Notes
These rounds are best served warm and can be enjoyed as a snack or side dish. They can be paired with dips like ranch or marinara. Leftovers can be stored in an airtight container in the fridge for 2-3 days. Reheat in the oven or microwave.
