  • 2 medium yellow squash or zucchini, sliced into 1/4-inch rounds You can use either type of squash.
  • 1 to 2 tablespoons olive oil Use more or less based on preference.
  • Salt, to taste Add according to preference.
  • 1 cup shredded cheese (such as cheddar or mozzarella) Different cheeses can add various flavors.
  • 1/2 teaspoon garlic powder Adds flavor, adjust to taste.
  • 1/2 teaspoon black pepper Adjust to preference.
  • 1/4 cup breadcrumbs (optional) For added crunch.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss the sliced squash or zucchini with olive oil, salt, garlic powder, and black pepper.
  3. Arrange the rounds in a single layer on a baking sheet.
  4. Sprinkle the shredded cheese evenly over the rounds. If using, also sprinkle breadcrumbs on top for added crunch.
Cooking
  1. Bake in the preheated oven for 15-20 minutes or until the squash is tender and the cheese is melted and golden.
  2. Remove from the oven and let cool slightly before serving.

Notes

These rounds are best served warm and can be enjoyed as a snack or side dish. They can be paired with dips like ranch or marinara. Leftovers can be stored in an airtight container in the fridge for 2-3 days. Reheat in the oven or microwave.
