Ingredients

Potato Preparation
  • 3–4 large large russet potatoes, washed and sliced into ¼-inch rounds Russet potatoes are ideal for baking.
  • 1 tablespoon Butter, melted (for brushing) Brush both sides of the potato slices.
  • to taste Salt and pepper Season to your liking.
Toppings
  • 1 cup Shredded cheese (cheddar, Monterey Jack, or your favorite blend) Use a blend for more flavor.
  • 2–3 Green onions, chopped For added freshness and color.
  • 4–5 slices Bacon, cooked and crumbled Can be replaced with vegetarian options.
  • for dipping Sour cream Serve alongside for dipping.

Method

Preparation
  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Cut the potatoes into uniform ¼-inch slices. Lay them out in a single layer on the baking sheet. Brush both sides with melted butter, then sprinkle with salt and pepper.
Baking
  1. Bake in the preheated oven for 30 minutes, flipping halfway through. The slices should be golden and slightly crispy on the edges, and fork-tender in the middle.
  2. Remove the tray from the oven. Sprinkle each slice with shredded cheese, crumbled bacon, and chopped green onions.
  3. Return the tray to the oven for another 5 minutes, or until the cheese is melted and bubbly.
Serving
  1. Serve the cheesy baked potato slices hot, with sour cream on the side for dipping.

Notes

For variations, skip the bacon for a vegetarian option or add jalapeños for a spicy kick. For a heartier meal, top with shredded chicken or pulled pork.
