Preparation
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
- Cut the potatoes into uniform ¼-inch slices. Lay them out in a single layer on the baking sheet. Brush both sides with melted butter, then sprinkle with salt and pepper.
Baking
- Bake in the preheated oven for 30 minutes, flipping halfway through. The slices should be golden and slightly crispy on the edges, and fork-tender in the middle.
- Remove the tray from the oven. Sprinkle each slice with shredded cheese, crumbled bacon, and chopped green onions.
- Return the tray to the oven for another 5 minutes, or until the cheese is melted and bubbly.
Serving
- Serve the cheesy baked potato slices hot, with sour cream on the side for dipping.
Notes
For variations, skip the bacon for a vegetarian option or add jalapeños for a spicy kick. For a heartier meal, top with shredded chicken or pulled pork.
