- In a large skillet, heat olive oil over medium heat. Add the diced onion and sauté until translucent.
- Add ground beef, cooking until browned. Season with salt and pepper.
- In a pot, cook the cheese tortellini according to package instructions. Drain and set aside.
- In the skillet with the beef, pour in beef broth and bring to a simmer.
- Stir in the provolone cheese until melted and creamy.
- Add the cooked tortellini to the skillet and toss to coat in the sauce. Serve warm.
Notes
Serve warm, garnished with extra provolone cheese or fresh herbs. Pairs well with a side salad or garlic bread. Store leftovers in an airtight container in the refrigerator for 3-4 days. Reheat in the microwave or on the stovetop until heated through.
