  • 1 lb ground beef
  • 1 medium onion, diced

  • 1 cup beef broth
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Method
 

Preparation
  1. In a large skillet, heat olive oil over medium heat. Add the diced onion and sauté until translucent.
  2. Add ground beef, cooking until browned. Season with salt and pepper.
  3. In a pot, cook the cheese tortellini according to package instructions. Drain and set aside.
  4. In the skillet with the beef, pour in beef broth and bring to a simmer.
  5. Stir in the provolone cheese until melted and creamy.
  6. Add the cooked tortellini to the skillet and toss to coat in the sauce. Serve warm.

Notes

Serve warm, garnished with extra provolone cheese or fresh herbs. Pairs well with a side salad or garlic bread. Store leftovers in an airtight container in the refrigerator for 3-4 days. Reheat in the microwave or on the stovetop until heated through.
