  • 1 package cheese tortellini (20 oz)
  • 1 lb ground beef Can substitute with chicken or turkey.
  • 1 medium onion, diced
  • to taste Salt and pepper
  • 2 cups provolone cheese, shredded Can substitute with mozzarella or a blend of Italian cheeses.
  • 1 cup beef broth
  • 1 tablespoon olive oil For sautéing.

  • - sliced peppers
  • - sliced mushrooms

Method
 

Cooking
  1. In a large skillet, heat olive oil over medium heat. Add the diced onions and cook until translucent.
  2. Add the ground beef and cook until browned. Season with salt and pepper.
  3. Add the beef broth and bring to a simmer.
  4. Stir in the cheese tortellini and cook according to package instructions until al dente.
  5. Remove from heat, and stir in the provolone cheese until melted and creamy.
Serving
  1. Serve hot with optional toppings like sliced peppers and mushrooms.

Notes

To store leftovers, let the dish cool completely. Place it in an airtight container and store it in the refrigerator for up to 3 days or freeze it for up to 2 months. Thaw in the fridge overnight and warm on the stove or in the microwave.
